“Gemma Glitter roze stamppot” was the stamppot taught to The Soft Protest, Digest by Nina Schouten & Aafke Bouman. It mainly consisted of a combination of potatoes and beetroots mashed together. “Gemma Glitter roze stamppot” is a recipe inspired by the dutch TV character Gemma Glitter, always dressed in pink clothing, with pink nails and gold or pink jewelry.

Facts & stories
“Nina makes stamppot around 15 times a year, mostly in the winter. Aafke makes it a bit less frequently, though always in the winter. Once they cook stamppot, it lasts for a week, and they do not get get tired of it. Aafke’s grandmother used to cook the pink stamppot when she was a child, and she loved it because of its festive color. Aafke’s asked her mom for this recipe, and her mother was delighted that she could hand it over as usually her father is the one you ask for recipes. According to both, roots and onions is a classic combination, however mushrooms are not very present in the dutch kitchen. Pre-cooked beets are good to have around because they can last forever. In general, Nina likes to use all the left-over vegetables in her kitchen and cook dishes out of it. At the final peak of the Stamppot making (the stamping) Nina suddenly cries “It is too liquid! It’s not stamppot anymore!”. Another potato is added in this critical moment and the stamppot is saved.”
Recipe
Ingredients:
- 500 gr. floury potatoes
- 400 gr. of cooked beetroot
- 2 big mushrooms
- 1 onion
- 1 clove of garlic
- 150g of jonge belegen (young soft cheese)
- Butter
- Mustard
Preparation
1. Peel the potatoes
2. Boil in lightly salted water
3. Cut the beetroots in slices (0,5cm thick)
3. Cut the mushrooms in medium size bits
4. Dice the cheese in bite size pieces
5. Pan fry the onions, mushrooms and garlic in butter on medium heat
6. Add a table spoon of mustard to the onion compote
7. Add the beetroot to the potato
