“Hete Bliksem” was the stamppot taught to The Soft Protest, Digest by Marco Kamber. It mainly consisted of a combination of potatoes, apples and parsnip, mashed together. Meaning “Hot lightning”, the “Hete Bliksem” is supposed to be eaten very hot.

“Marco never made Stamppot before but is very curious towards this dutch classic. He appears a bit nervous about cooking it for us. We agree that he should not be put too much pressure on himself because Holland is not particularly tied to its food traditions. Nobody will get mad if he adds fruits or nuts. Marco is from Switzerland.He invented his own Stamppot inspired by autumn. He is shocked about dutch food culture, and how dutch people can be so proud of their processed food.”

Recipe

Ingredients:

  • 2 onions
  • 1 apple
  • 200 gr. goat pecorino cheese
  • 360 gr. parsnip
  • 500 gr. potatoes
  • A small handful of peeled almonds
  • 2 table spoons of unsalted butter

Preparation:

1. Boil the potatoes whole, with the peel until half cooked
2. Cool off under cold water and remove the peel
3. Roughly chop the onions, half the apple and almonds
4. Pan fry in foamy butter
5. Roughly chop the parsnip, without removing the peel
6. Cut the pecorino in medium size cubes
7. Boil the parsnip, potatoes and half apple
8. Drain and mash with stamper
9. Add the butter, the cheese and the pan fried onions and apples
10. Lekker
