Forbidding meat eating and recipe for ancient sweet plant-based meat:‘Nepeieren’ or ‘Fake egg’.

In the Netherlands, from the Middle Ages to the end of the 16th century, being catholic meant days when the consumption of meat and often dairy was forbidden. The cooks of the rich thus prepared luxurious and elaborate preparations in order to compensate for the absence of meat and dairy products in the meal. Dishes that resembled a rabbit or a pheasant, plant based butter or eggs could be found on the table. Gheeraert Vorselmans in is Eenen Nyeuwe coock boeck from 1560 included, for example:

Recipe:

1. Empty the shell of real eggs
2. Add 120 grams of ground almonds to 1 liter of boiling water
3. Allow to cool slightly and then strain the liquid through a linen cloth
4. Here you have almond milk
5. Heat it again and add 2 teaspoons of white sugar and 6 leaves of soaked and squeezed gelatine
6. Here is the protein
7. Pour into the empty egg shells
8. Reserve three teaspoons of almond milk, color with saffron and mix
9. Form balls of the size of egg yolks and place in the center of the almond milk before it is solidified
10. Allow to cool.
